Riesling — A Winemaker's Guide to the World's Most Transparent Grape

Riesling hides nothing. It has no oak to shelter behind, no malolactic softening, no extractive weight — just fruit, acid, and whatever the site gave it. That transparency is why it is the connoisseur's white grape and why it is unforgiving to make: every decision you take shows up in the glass. It is also, for a small producer, one of the most rewarding varieties there is, because almost everything that makes great Riesling great is free.

Variety Profile

  • Origin: The Rhine, Germany; first documented in the fifteenth century
  • Bud burst: Fairly late — reasonable frost avoidance
  • Ripening: Late; needs a long, cool autumn
  • Wood hardiness: Excellent. One of the few vinifera varieties that survives genuinely cold winters, which is why it succeeds in the Finger Lakes, Ontario and Michigan
  • Berries: Small, thin-skinned, in tight bunches — so botrytis-susceptible, which is a fault in a wet year and a gift in the right one
  • Acidity: Very high, dominated by malic acid, retained at ripeness
  • Aromatics: Bound as odourless glycosides in the grape and released slowly — which is why Riesling develops in bottle for decades
  • Aromas: Lime, green apple, white peach, apricot, honeysuckle, wet stone; with age, honey, beeswax, ginger, and the famous petrol note
  • Ageing: Among the longest-lived white wines in the world, at any sweetness level

The Six Rules

Riesling winemaking is a short list of firm rules and very little else.

1. Never run malolactic fermentation

Malic acid is Riesling's structure. Converting it to lactic acid produces a soft, dull, short wine with none of the tension that makes the variety worth growing. This is not a stylistic preference — it is close to a universal rule among serious producers.

Block it actively: adequate free SO₂ after fermentation, cool storage, prompt racking off gross lees. Do not simply assume it will not happen. See MLF explained and understanding SO₂.

2. Ferment cold

12–15 °C. Riesling's aromatics are fragile and a warm fermentation coarsens them irreversibly. Cool ferments are slow — four to six weeks is normal — and that is fine. Choose a strain rated for low-temperature aromatic work; see choosing your yeast and fermentation temperature.

3. Handle the juice gently and cold

Chill the fruit. Press gently, split fractions, cold settle, rack off the gross lees before fermentation. Riesling has enough phenolic content to turn bitter from hard pressing, and enough delicacy to lose its aromatics to oxygen.

4. Little or no oak

New oak on Riesling is almost always a mistake. The tradition, where wood is used at all, is very large neutral casks — the Mosel Fuder of 1,000 litres, or the Alsatian foudre — where the wood contributes slow oxygen and nothing else. See barrel ageing basics.

5. Decide dry or off-dry on your acid, not on your taste

This is the decision that most determines whether your Riesling works.

  • High acid (TA 8–11 g/L, pH under 3.1): residual sugar is not a compromise, it is the balance. A few grams of sugar against acidity that high tastes taut, not sweet — this is the whole logic of Mosel Kabinett.
  • Moderate acid (pH 3.2–3.4): dry is usually better. The same residual sugar that reads as tension at pH 3.0 reads as flabbiness at pH 3.4.

6. Arrest the ferment properly, or don't arrest it at all

Traditional German off-dry wine is made by stopping the fermentation with sugar still present, not by adding sugar back. The method: chill hard, rack off the yeast, then sterile filter. That last step is the one that matters. A sweet wine bottled with a viable yeast population will referment in the bottle.

If you cannot sterile filter, ferment to dryness and back-sweeten deliberately with proper stabilisation — the procedure and its real limits are set out in back-sweetening. Do not split the difference by hoping.

Pick on flavour and acid together. Riesling's aroma precursors accumulate late, so fruit picked purely on sugar is often aromatically hollow. See harvest timing.

Botrytis: Gift and Hazard

Riesling's thin skins and tight bunches mean botrytis arrives easily. In a foggy-morning, sunny-afternoon autumn it becomes noble rot and gives you the greatest sweet wines in the world — see Tokaji Aszú and Neusiedlersee for how that process works. In a persistently wet autumn it becomes grey rot, which brings laccase, browning and mouldy aromas, and you should sort it out and discard it. Taste the berries: honeyed and concentrated is noble; damp and bitter is not.

Cold Stabilisation and Closure

High acid plus high potassium means tartrate deposits. Riesling in clear glass will show them. Cold stabilisation is standard practice.

On closure: the fine-Riesling world has moved decisively towards screwcap, in Australia, Austria and New Zealand especially, precisely because Riesling's appeal is freshness and a cork's oxygen ingress works against it. The trade-off is that very low oxygen transmission can encourage reduction, so get your fermentation nutrition and lees handling right. See closure comparison.

The Petrol Note

The kerosene or petrol aroma in mature Riesling comes from TDN (1,1,6-trimethyl-1,2-dihydronaphthalene), released from precursors over time. It is developed by sun exposure and heat in the vineyard and by warm storage in bottle, and it is a marker of maturity rather than a fault. Some markets love it and some do not; if you want less of it, more canopy shade over the fruit zone and cool cellar storage both help.

Food Pairing

Off-dry Riesling is arguably the most useful food wine in existence: Thai and Vietnamese food, Sichuan, pork, charcuterie, smoked fish, strong cheese. Dry Riesling with shellfish, trout, roast chicken, asparagus. Serve at 10–12 °C — ice-cold Riesling is a waste of a good bottle.

Tip: Make your Riesling bone dry the first time. It exposes every flaw in your fruit and your handling, and once you can make a clean, balanced dry Riesling you can make anything. Residual sugar covers mistakes, which is exactly why it should not be your starting point.
