
Many country wines, meads, and fruit wines taste better with a small amount of residual sweetness — not enough to be dessert wines, but enough to balance high acid and bring out fruit character. The challenge: live yeast in a finished wine will ferment any sugar you add, turning your sweet wine into more dry wine (and potentially over-carbonating the bottles). Preventing this requires stabilisation before sweetening.
After primary fermentation, your wine contains:
If you add sugar without stabilising, the dormant yeast wakes up and ferments it. The result ranges from slightly more dry wine (if bottles are vented) to explosive carbonation or broken bottles (if sealed).
Back-sweetening safely requires two steps, used together:
Dose: 0.25g per litre (250 mg/L)
Effect: Inhibits yeast reproduction — sorbate prevents yeast cells from budding (reproducing), so any existing cells cannot grow into a population capable of fermenting the added sugar. Important: sorbate does not kill yeast; it only prevents reproduction.
How to use:
Warning: Never use sorbate without SO₂. In wines with residual lactic acid bacteria (after MLF), sorbate can be metabolised to hexadienol by the bacteria, producing a geranium-leaf smell (geranium taint). SO₂ kills the bacteria that would otherwise cause this problem.
Dose: 1 Campden tablet per 5L (approximately 50 mg/L SO₂), or 0.3g potassium metabisulphite per 10L
Effect: Kills or inhibits residual bacteria (including lactic acid bacteria that would cause geranium taint) and reduces the viable yeast population.
Combined protocol:
Once stabilised, add sugar incrementally — you cannot remove excess sweetness:

Taste guides more reliably than numbers — acidity, alcohol, and fruit intensity all affect how sweet a given sugar concentration tastes.
For meads, adding honey back to sweeten is the most natural approach. Honey sweetens at approximately 80% of table sugar's sweetness (per gram) due to its water content and fructose/glucose ratio. Same stabilisation protocol applies.
A concentrated, unfermented grape juice adds sugar plus grape character. Useful for grape wines. Less precise but more natural in character. Available from home brew suppliers.
Non-fermentable artificial sweeteners (erythritol, xylitol, sucralose) can be added without triggering fermentation — no stabilisation required. They don't ferment. The taste profile differs from sugar, however, and some have off-notes in wine. Erythritol is the most neutral.
For competition wines or wines where you want a "clean" label: artificial sweeteners are a practical but philosophically different choice from real sugar.
Back-sweeten at bottling, not before. The longer sweetened wine sits before bottling, the more time any surviving yeast has to partially ferment the sugar you added. Once stabilised and sweetened, bottle promptly (within 24–72 hours).
Never add sorbate to a wine that hasn't fully fermented. If primary fermentation isn't complete, sorbate prevents the yeast from finishing the job. Confirm fermentation is complete (stable gravity at or near 1.000 for 48 hours) before stabilising.
Sorbate is not infallible. High populations of residual yeast can overwhelm the sorbate inhibition, particularly in very low-alcohol wines or wines bottled at high gravity. For additional insurance:
For home winemakers without filtration equipment, sorbate + SO₂ + cold crashing provides reliable stabilisation for most wines.
For a sparkling wine at a specific sweetness level, back-sweetening is replaced by dosage — adding a precise amount of sweetened wine at disgorgement. This is the méthode traditionnelle approach. The CO₂ is already in the bottle from secondary fermentation; sweetness is added at the very end.
Warning: Never bottle a back-sweetened wine without confirming stability first. Leave one unsealed test bottle for 2–3 days at room temperature. If there's no carbonation or sweetness loss, your stabilisation is effective and you can proceed with the rest.
