
Grenache spent most of the twentieth century as an anonymous workhorse: planted everywhere warm, blended into everything, credited for nothing. Then a series of winemakers in Priorat, Châteauneuf-du-Pape and the Barossa demonstrated that old, low-yielding Grenache makes some of the most distinctive red wine on earth — perfumed, silky, and utterly unlike a Cabernet or a Syrah. It is now one of the most fashionable varieties in the world, and one of the most misunderstood in the cellar.
Grenache Blanc and Grenache Gris are colour mutations of the same variety, both excellent and both underused: full-bodied, low-acid whites that reward lees work and large-format oak.
Grenache is easy to grow and easy to get wrong. Almost all of the difficulty comes down to four traits.
Grenache ripens to 15% and beyond without complaint, and picking decisions in a warm year are brutal: pick early and you get green, hard tannin with pale colour; pick late and you get a 16% wine. There is no cellar fix.
The practical approach is to make the decision on numbers before harvest, not on a hunch during it. Grenache is not a dark grape and never will be. The instinct — long macerations, hard pump-overs, extended post-ferment soaking — is exactly wrong, because high alcohol is an efficient solvent for the harsh seed tannins you are stirring up while the anthocyanin you want is simply not there.

This is the trait most home winemakers discover the hard way. Grenache is markedly more oxidation-prone than Syrah or Cabernet — its colour browns and its fruit turns to dried-fig and varnish faster than you expect. Consequences:
Ripe Grenache commonly arrives above pH 3.7. High pH means weaker SO₂ activity, less stable colour, and greater microbial risk including Brettanomyces. Measure at the crusher and consider a tartaric addition pre-fermentation. See pH and TA.

If you grow Grenache and nothing else, even 10–15% of a darker, more tannic red will transform the wine. See blending theory.
Grenache may be the best rosé grape there is: enough colour for a lovely pale pink from a few hours of skin contact, plenty of strawberry aromatics, and a naturally soft texture. Press early, ferment cool, protect fiercely from oxygen, bottle young.
The reason Priorat and Barossa Grenache is profound and young-vine Grenache is pleasant is yield. Vigorous young Grenache overcrops and dilutes; a gnarled 80-year-old bush vine produces a couple of kilos of intensely flavoured fruit. If you are planting, plant for low vigour — poor soil, no irrigation, wide spacing — and be patient.
Slow-roast lamb with rosemary, herb-crusted pork, ratatouille, grilled vegetables, cassoulet, Sardinian roast suckling pig. Grenache's soft tannin and red-fruit sweetness suit herbs and roast vegetables far better than tannic reds do.
Tip: If your Grenache tastes hot and short, the cause is nearly always high alcohol combined with low acid, and the cheapest correction is blending — a small proportion of an earlier-picked, higher-acid lot of anything will restore the finish.
