Blending Theory: How to Create a More Complex Wine

Blending is one of winemaking's highest skills. The world's greatest wines — Bordeaux, Châteauneuf-du-Pape, Champagne, Port, Rioja — are all blends. The purpose is never to hide weakness in individual components but to create a wine of greater complexity, balance, and longevity than any single variety or lot can produce alone.

Why Blend?

Blending serves multiple purposes depending on your goal:

Balancing components: One lot may have excellent colour but harsh tannins; another may have soft tannins but thin colour. Together they complement each other.

Achieving house style: Large wineries blend extensively to maintain a consistent style year after year regardless of vintage variation. The blend is the brand.

Adding complexity: Different varieties bring different aromatic compounds. Blending creates a third wine neither component alone could be.

Managing quantity: A small volume of exceptional wine can be extended with a larger volume of good wine without compromising quality significantly if done well.

Press fraction integration: Free-run juice blended with P1 press fraction produces more complex, structured wines than either alone.

Bench Trials: The Correct Method

Never blend by assumption — always run bench trials first.

Equipment needed

  • Calibrated syringes or measuring pipettes (10mL, 25mL)
  • Numbered wine glasses (at least 6)
  • Notebook for ratios and tasting notes
  • Dropper for small additions

Protocol

  1. Taste all components separately. Note the positive characteristics of each and what each lacks.

  2. Decide on trial ratios based on your assessment. If component A is structured but rough and B is soft but thin, start with: 100/0, 80/20, 70/30, 60/40, 50/50, and 30/70.

  3. Make small blends (e.g. 50mL total). Use syringes for precision. For an 80/20 blend in 50mL: 40mL of A + 10mL of B.

  4. Let blends rest 5–10 minutes before tasting. The wine needs a moment to integrate.

  5. Blind evaluation: Number the glasses and taste without knowing the ratio. Your preference should determine the blend, not the numbers.

  6. Iterate. Once you've identified a winning range, run finer trials within it (e.g. if 70/30 and 60/40 were best, try 68/32, 65/35, 62/38).

  7. Confirm at rest. Leave your best 3–4 candidates for 24 hours and re-taste. Blends change after they've had time to integrate.

Scale-up calculation

If you chose a 65/35 blend:

  • Total volume desired: 100L
  • Component A: 65L
  • Component B: 35L

Always confirm the math and mark up your plan before pumping anything.

Classic Variety Combinations

Cabernet Sauvignon + Merlot (Bordeaux right bank)

Why: Cabernet provides structure, tannin, blackcurrant, and longevity. Merlot softens, adds plum fruit and mid-palate weight, and makes the wine approachable earlier.
Typical range: 60–75% Cabernet, 25–40% Merlot, often small amounts of Cab Franc, Petit Verdot, or Malbec.

Cabernet Sauvignon + Cabernet Franc

Why: Cab Franc lifts Cabernet's aromatics, adding floral notes (violet, pencil shavings) and freshening the palate. Reduces heaviness.
Typical range: 80–90% Cabernet, 10–20% Cab Franc.

Grenache + Syrah + Mourvèdre (GSM — Rhône, Barossa)

Why: Grenache provides body, alcohol, raspberry fruit, and spice. Syrah adds structure, colour, and pepper. Mourvèdre provides grip, dark fruit, savouriness, and longevity.
Typical range: 50–70% Grenache, 15–30% Syrah, 10–20% Mourvèdre.

Sauvignon Blanc + Sémillon (Bordeaux white)

Why: Sauvignon Blanc provides aromatics (grass, gooseberry, citrus) and acidity. Sémillon adds body, texture, and ageability. Without Sémillon, pure Sauvignon is intense but one-dimensional for ageing.
Typical range: 70–85% Sauvignon, 15–30% Sémillon.

Syrah + Viognier (Rhône, northern, e.g. Côte Rôtie)

Why: Viognier's linalool and floral terpenes co-fermented with Syrah enhances aromatic complexity and colour stability through co-pigmentation.
Typical range: 3–10% Viognier co-fermented or blended into Syrah.

Riesling + Sémillon (dry, age-worthy whites)

Regional tradition (Hunter Valley, some Alsace). Riesling provides structure and acidity; Sémillon adds texture and honey/wax character with age.

Press Fraction Blending

For grape wines, the free-run and press fractions have distinct characters:

  • Free-run: finest aromatics, lowest tannin, brightest colour, most delicate
  • P1 (light press): adds body, some tannin, complexity — usually blended with free-run
  • P2 (harder press): more astringent, more extraction — use selectively, if at all
  • P3: usually too harsh for table wine blending

A common home winemaker blend: 80% free-run + 20% P1. This gives more complexity than free-run alone without the harshness of heavy press fractions.

Timing of Blending

Before oak ageing: Allows the blend to integrate during ageing. The components meld together with time.
After oak ageing: Allows individual components to develop independently first, then blend. More complex but harder to predict the result.
At bottling: A late blend is fine for simple wines but may not integrate fully for years.

Tip: When in doubt, run a trial blend and leave a sealed sample for 48 hours before making the final decision. Blended wines change significantly as the components integrate.
