
There is no wine that will teach you more about oxygen than Sherry. Every other fine wine is made by keeping air away from it; Sherry is a region built on two opposite answers to the question of what to do when air gets in — cover the wine with a living film of yeast, or let the oxygen do its work and lean into it. If you understand how Jerez handles those two paths, you will handle your own cellar better, whether or not you ever fortify anything.
The Sherry triangle sits in the far south-west of Spain, in Cádiz province, between three towns: Jerez de la Frontera, El Puerto de Santa María and Sanlúcar de Barrameda. The Atlantic is close, and its influence is the whole reason the region works in a climate this hot.
The best vineyards are on albariza — a brilliant white, chalky, calcium-carbonate soil that reflects sunlight, cracks into a hard crust that traps winter rain, and then releases that moisture through a rainless summer. Named albariza pagos such as Macharnudo, Balbaina and Carrascal are the region's grand crus.
Hot Mediterranean, moderated by the Atlantic. Summers are fierce and rainless. The decisive feature is the poniente, the humid westerly wind off the ocean, which keeps cellar humidity high. Bodegas are built tall, with high windows and earth floors that are watered — all to maintain the cool, damp, still conditions the flor yeast needs to survive.

Palomino's neutrality is the point. Sherry's flavour comes from ageing, not fruit, and a variety with strong varietal character would fight the process.
Everything is decided in the first year. Base wine is fermented dry, then classified by the capataz (cellar master), then fortified — and the level of fortification chooses the wine's whole future.
Biological ageing (fino / Manzanilla). Fortified to roughly 15–15.5% ABV, low enough that a film-forming strain of Saccharomyces can live on the wine's surface. That film — the velo de flor — consumes oxygen, alcohol and glycerol, and produces acetaldehyde, the compound responsible for the green-apple, bread-dough, nutty-saline character of fino. Because the flor physically covers the wine, it also protects it from oxidation. The result is bone-dry, pale, and unlike anything else.
Oxidative ageing (oloroso). Fortified to around 17% or above, which kills the flor outright. The wine then ages in contact with air in part-filled casks for years or decades. Colour deepens to mahogany, volume evaporates and concentrates, and the flavours turn to walnut, dried fig, orange peel and polished wood.
The in-between styles. Amontillado begins under flor and then loses it, either naturally or by further fortification — so it carries a fino's saline core inside an oxidative frame. Palo cortado is the anomaly: a wine that shows the aromatics of an amontillado with the body of an oloroso, classified as such by tasting rather than by recipe.
Manzanilla may only be made in Sanlúcar de Barrameda, at the mouth of the Guadalquivir. It is the same biological ageing as fino, but Sanlúcar's bodegas are cooler and more humid year-round, which sustains a thicker, more continuous flor with less seasonal die-back. The result is the most delicate and most saline expression in the region — sea salt, green almond, chamomile — and it is a genuine terroir difference produced by cellar climate rather than by soil.
En rama bottlings of fino and Manzanilla are drawn with minimal or no filtration and show far more of the flor character. They are also short-lived: treat an open bottle like a white wine, not a fortified one.

You do not need Palomino or a bodega to use any of this.
Oxygen is a variable, not an enemy. Sherry proves that controlled oxidation produces flavours worth wanting. The rule it also proves: oxidation is only pleasant when it is deliberate and complete. Half-oxidised wine is just faulty. Read understanding SO₂ and volatile acidity — the latter is what goes wrong when acetic bacteria, rather than flor, get the air.
Run a small solera. A three-vessel solera in demijohns is entirely practical for a country wine, a mead or a fortified fruit wine. Draw a third from the oldest, refill from the middle, refill the middle from the youngest, and add the new batch at the top. Within four or five years you will have a wine with more complexity than any single batch you made.
Fortification maths. If you want to try a flor-aged wine, the target strength matters more than anything: flor thrives at 15–15.5%, struggles above about 16%, and fortifying to 17% kills it outright — which is exactly how oloroso is made. Fino and Manzanilla, cold: olives, almonds, jamón, fried fish, sushi. Amontillado: consommé, mushrooms, hard cheese. Oloroso: game, oxtail, mature Manchego. PX: over vanilla ice cream, or with blue cheese.
Tip: Serve fino and Manzanilla as cold as a white wine, from a freshly opened bottle, in a normal wine glass rather than a thimble. Almost everyone who thinks they dislike dry Sherry has only ever had it warm and stale from a bottle that had been open a month.
