Fining Agents: What Each One Does and How to Bench-Trial It

Fining is the addition of a substance that binds to something you want out of the wine, then falls out of solution taking it with it. It is not filtration: filtration removes particles mechanically by size, while fining removes dissolved and colloidal material chemically. The two are complementary, and fining generally comes first.

Every fining agent removes more than the thing you aimed at. That is the whole problem, and the reason the bench trial below matters more than any individual product here.

The Bench Trial: Do This First, Every Time

Never treat a batch at a rate you have not tested on that batch. Fining response depends on the wine's phenolic and protein profile, its pH, its temperature and its age — a rate that was perfect last vintage can strip this one.

  1. Draw a representative sample from mid-vessel, not off the lees, and take enough for a control plus every trial rate.
  2. Set up identical glasses, one per rate, plus an untreated control. Without the control you are comparing the wine to your memory of it.
  3. Choose a spread of rates bracketing the supplier's recommended range — a low, mid and high rate, plus one deliberately above the range so you can see what over-fining tastes like.
  4. Prepare the agent exactly as the supplier specifies and dose by weight or by an accurately diluted stock solution. Eyeballing at trial scale produces meaningless results.
  5. Stir, then wait. Give the trials the same contact time and temperature you intend for the batch. Rushing this is the commonest way a trial misleads.
  6. Taste blind, numbered and shuffled, ideally with another person. Assess on the finish, not the attack.
  7. Pick the lowest rate that achieves what you wanted — not the rate that changed the wine most.
  8. Scale arithmetically and record everything: agent, rate, contact time, temperature, and what you were fixing.

Tip: Trial at least one rate you expect to be too high. Over-fined wine is thin, hollow and short — once you have tasted that in a trial glass you will recognise it instantly, and you will never again guess a rate on a full batch.

Protein Finings: Tannin, Astringency and Bitterness

These are the agents you reach for when a red is aggressively astringent — the Sagrantino, Tannat, Nebbiolo problem. They work because tannins bind proteins; add protein to the wine and the harshest tannin fractions leave with it. See tannin management for the underlying chemistry.

Egg white (albumen). The traditional choice for structured reds, and the gentlest. Conventionally used at around one to four whites per 225 L barrel, beaten to a light foam and stirred in. Selective for the most astringent fractions, and strips relatively little body. Beat gently — over-beaten albumen fines less effectively.

Gelatin. More powerful and less selective. It will take out harsh tannin, but it takes out colour and body too, and it is the agent most likely to over-fine. Because excess gelatin can leave the wine protein-unstable, it is often followed by a small bentonite addition to remove the surplus.

Isinglass (from fish swim bladders). Traditionally used for whites, giving bright clarity with less flavour loss than gelatin. Slow-settling, with a loose fluffy lees — leave time and rack carefully.

Casein / potassium caseinate (milk protein). Effective against browning, oxidised character and some bitterness — useful on a white that has picked up colour it should not have.

Plant proteins (pea, potato). The vegan alternatives, and increasingly capable. Performance differs enough between products that supplier trials are essential.

Bentonite: Protein Stability

Bentonite is a swelling clay that carries a negative surface charge and binds positively charged proteins. Its job is heat stability — preventing the protein haze that appears when a bottled white or rosé gets warm — and nothing else you should rely on it for.

Commonly cited working rates fall roughly in the range 20–100 g/hL (0.2–1 g/L), but the correct rate for your wine is whatever the heat stability test says: hold a sample warm, cool it, look for haze. Trial the rates, retest, use the lowest that passes.

Bentonite is blunt. It strips aroma, costs you volume in a substantial lees, and does nothing useful for tannin. Hydrate it fully in water well ahead of use — dumped in dry it clumps and does very little.

Targeted Agents

PVPP (polyvinylpolypyrrolidone). Binds small phenolics specifically: bitterness and pinking or browning in whites, with less collateral damage than carbon. The precise tool for a white that is bitter rather than hazy.

Activated carbon. Removes colour and off-odours, and removes aroma indiscriminately along with them. A genuine last resort. If you use it, trial at the smallest rates you can measure.

Copper sulphate. Used against residual hydrogen sulphide and mercaptans. Easy to overdose, residual copper is itself a fault and a stability problem, and permitted additions and residual limits are set by regulation and differ by jurisdiction. Fix the cause during fermentation instead — see nutrients. If you must use it, work at the smallest measurable rates and check your local limits.

Chitosan and other polysaccharide finings. Increasingly used for clarification and some microbial and metal reduction; permitted uses vary by jurisdiction, so check before relying on one.

Over-Fining, and When Not to Fine

Over-fining is not reversible. What comes out does not go back, and a stripped wine cannot be rebuilt by blending — you can only dilute the damage.

Before fining at all, ask whether time solves it. Tannin polymerises with age, suspended solids settle, young reductive notes often blow off. Racking, cold settling and patience clarify a great deal of wine for free, and every fining decision you avoid is aroma you keep. Practical notes:

  • Fine before cold stabilisation and before filtration, leaving time for a full settle plus a clean rack.
  • Temperature matters. Most agents work faster and settle more compactly cool; keep batch and trial at the same temperature.

Allergens and Declarations

Egg, milk and fish-derived finings are allergens. Most act as processing aids that settle out with the lees, and processing aids are generally outside ingredient-declaration requirements — but if you have fined with egg or milk products and residues may remain in the finished wine, the allergen belongs on the declaration. Isinglass is a special case: in the EU it is specifically exempted from allergen labelling when used as a wine fining agent (Regulation 1169/2011, Annex II), though other markets differ — when in doubt, declare.
