White Wine from Concentrate

You will need
- White grape juice concentrate (no preservative)1 L
- Sugar500 g
- White wine yeast1 sachet
- Waterto 4.5 L

Sanitise. Grape concentrate is just grape juice with the water taken out — add it back and you have a must, any time of year.

This wine's lesson is pitching the yeast well: sprinkle it over a small cup of warm (blood-temperature) water and leave it 10-15 minutes until creamy before adding it. Waking it up first gives a stronger, cleaner start.

Dilute the concentrate with cooled boiled water, stir in the sugar dissolved warm, and top to 4.5 L (reading ~1.080).

Add the woken yeast, fit the airlock.

Ferment out, rack, clear.
