White Wine from a Carton

In season January to December · makes 4.5 L · target OG 1.075

A companion first wine in white; year-round, nothing to forage, forgiving.

You will need

  • Pure white grape juice (100% juice, NO preservative)4 L
  • Sugar (optional)up to 500 g
  • White wine yeast1 sachet

Method

    Sanitise your demijohn, airlock and spoon and rinse them — the one habit that decides whether a wine is good.

    Check the juice has no preservative (no potassium sorbate) or it will not ferment.

  3. 3

    Pour the juice into the demijohn, stir in the sugar if you want more strength, and take a gravity reading.

    Add the yeast, fit the airlock, keep it warm.

    When the bubbling stops it is dry; let it settle clear and rack it off the sediment.

    Bottle. A crisp white for the price of a carton of juice — the twin of the red first wine.
