Tinned Mandarin Wine

You will need
- Tinned mandarin segments in juice2 large tins
- Sugar1.0 kg
- Pectic enzymeper dose
- Wine yeast + nutrient1 sachet
- Waterto 4.5 L

Sanitise. Tinned mandarins are soft, clean and sweet — an easy winter wine when nothing is in season.

Mash the mandarins with their juice under cooled boiled water; add pectic enzyme when cool and leave overnight so the wine will clear.

Add the sugar dissolved warm; top to 4.5 L (reading ~1.084); pitch the yeast and nutrient.

Ferment on the pulp two days, strain, and finish under the airlock.

Rack when clear, and again a month later.

A bright, gently citrus white for the depths of January.
