Tea Wine

A year-round pantry wine; tannin from a leaf (tea), like oak-leaf but from the caddy.
You will need
- Strong black tea (brewed and cooled)2 L
- Raisins, chopped500 g
- Sugar1.1 kg
- Lemons, juice of2
- Wine yeast + nutrient1 sachet
- Waterto 4.5 L
Method

Sanitise. This cupboard classic gets its backbone from a leaf: strong black tea gives tannin, the same grip a red wine gets from grape skins.

Brew 2 L of strong tea and let it cool. Chop the raisins (for body) into the bucket with the lemon juice.

Add the cooled tea and the sugar dissolved warm; top to 4.5 L (reading ~1.088); pitch the yeast and nutrient.

Do not over-brew or over-steep — too much tea makes it harsh and drying.

Ferment out, rack and clear.

A dry, amber, faintly tannic wine that ages well; keep a year.
