Prune Wine

Stoned dried fruit (no kernels), so it teaches restraint with a strong fruit and no stone hazard.
You will need
- Prunes (stoned dried plums), chopped600 g
- Sugar1.0 kg
- Lemons, juice of2
- Wine yeast + nutrient1 sachet
- Waterto 4.5 L

Sanitise. Prunes are stoned dried plums — deeply flavoured, so a modest amount goes a long way, and there are no stones to worry about.

Chop the prunes, put them in the bucket with the lemon juice, and pour on 3 L cooled boiled water; add the sugar dissolved warm and top to 4.5 L (reading ~1.088).

Pitch the yeast and nutrient; ferment on the fruit three or four days, then strain.

Rack as it clears, and again a month later.

A dark, rich, port-leaning winter wine.

Give it a year; it rewards keeping.
