Pomegranate Wine

You will need
- Pure pomegranate juice (no preservative)2 L
- Sugar1.0 kg
- Wine yeast + nutrient1 sachet
- Waterto 4.5 L
Method

Sanitise. Pomegranate juice is intensely coloured and tannic, so like blackcurrant you use it dilute rather than neat.

Check the juice has no preservative. Pour it into the demijohn with the sugar dissolved in warm water; top to 4.5 L (reading ~1.085).

Pitch the yeast and nutrient, fit the airlock.

Ferment out; the tannin means it tastes firm young.

Rack when clear and age most of a year to soften.

A jewel-red, faintly astringent wine from a carton.
