Peach Wine from a Carton

The carton shortcut again, this time peach — stone-free, so no amygdalin handling.
You will need
- Carton peach juice (nectar)2 L
- Sugar1.1 kg
- Pectic enzymeper dose
- Lemons, juice of2
- Wine yeast + nutrient1 sachet
- Waterto 4.5 L
Method

Sanitise. Like the apricot version, peach nectar is a stone-free pressed drink — a shortcut to peach wine with no stones to worry about.

Check it carries no preservative. Combine with 2 L cooled boiled water; add pectic enzyme and the lemon juice.

Add the sugar dissolved warm; top to 4.5 L (reading ~1.085); pitch the yeast and nutrient.

Ferment out under the airlock.

Rack when clear.

A delicate, fragrant, pale-gold white; best drunk young and fresh.
