Orange Wine

A winter citrus beginner; the airlock/headspace habit, and zest without the bitter pith.
You will need
- Oranges8
- Sugar1.2 kg
- Raisins, chopped250 g
- Wine yeast + nutrient1 sachet
- Waterto 4.5 L
Method

Sanitise. Pare a little zest from a few oranges (no white pith — it is bitter), then squeeze all the juice.

Dissolve the sugar in warm water; add the juice, a little pared zest and the chopped raisins; top to 4.5 L (reading ~1.086), leaving headspace for a lively citrus ferment.

Pitch the yeast and nutrient; fit the airlock with water in it so air stays out but gas can escape.

Ferment out, rack and top back up as it clears.

Bottle bright — a fresh, fragrant orange white, lovely slightly chilled.

Winter oranges make this a good cold-weather brew.
