- Wine or mead yeast1 sachet

- Lemons, juice of2
- Waterto 4.5 L
Method
- 1
Sanitise. A hydromel is a LIGHT, low-strength mead — the gentlest introduction to honey wine, and it comes ready far sooner than a strong one.
- 2
Do NOT boil the honey; warm it just enough to dissolve into the water. Add the lemon juice (honey is acid-poor).
- 3
Top to 4.5 L for a low OG of about 1.050 — that is the whole point, a session-strength honey wine.
- 4
Honey is nitrogen-poor, so still feed STAGGERED nutrient (a dose now, another in a day or two) even at this modest strength, or it finishes harsh.
- 5
Ferment out, rack when clear; a light mead is drinkable in months, not years.
- 6
A delicate, floral, easy-drinking honey wine — the mead to start with.
