Dried Fig Wine

Another winter cupboard wine; the same body-from-dried-fruit lesson with a mellower fruit.
You will need
- Dried figs, chopped500 g
- Sugar1.0 kg
- Lemons, juice of2
- Raisins, chopped150 g
- Wine yeast + nutrient1 sachet
- Waterto 4.5 L
Method

Sanitise. Dried figs give a mellow, honeyed body and are on any shelf all year.

Chop the figs, add with the raisins and lemon juice to the bucket, pour on 3 L cooled boiled water; add the sugar dissolved warm and top to 4.5 L (reading ~1.090).

Pitch the yeast and nutrient; ferment on the fruit a week, stirring daily, then strain.

Rack as it clears.

A soft, golden, faintly honeyed wine.

Best after a year in the bottle.
