Dried Apple Wine

First time

In season January to December · makes 4.5 L · target OG 1.088

Another pantry wine for the thin winter months; body from dried fruit.

You will need

  • Dried apple rings, chopped400 g
  • Sultanas, chopped300 g
  • Sugar1.0 kg
  • Lemons, juice of2
  • Wine yeast + nutrient1 sachet
  • Waterto 4.5 L

Method

    Sanitise. Dried apple and sultanas give a mellow, autumnal body from the store cupboard, any month.

    Chop and put both in the bucket with the lemon juice; pour on 3 L cooled boiled water; add the sugar dissolved warm and top to 4.5 L (reading ~1.088).

    Pitch the yeast and nutrient; ferment on the fruit a week, stirring daily, then strain.

    Rack as it clears.

    A soft golden wine that tastes of autumn in the depth of winter.

    Better for a year.
