A wonderfully fragrant, pale blush wine made from old-fashioned rose varieties. Modern roses often lack scent — seek out heritage varieties. Lovely as an aperitif or with light summer food.

Ingredients
2.5 litres rose petals, packed (no white heel)
1.3kg white sugar (per 4.5L)
Juice of 3 lemons
1 tsp citric acid
1/2 tsp wine tannin
1 Campden tablet
1 tsp yeast nutrient
Sauternes or dessert wine yeast
Method
1. Collect rose petals in the morning after dew has dried. Remove white base of each petal (it is bitter).
2. Place petals in fermentation bucket. Pour over 4.5L boiling water.
3. Leave 24 hours, then strain. Press petals gently.
4. Dissolve sugar in the liquid, add lemon juice, citric acid, tannin, Campden.
5. Next day, add nutrient and pitch yeast.
6. Ferment in demijohn under airlock at 18°C.
7. Rack when clear, add Campden.
8. Bottle when fully stable. Ready after 6 months — best at 12.
