Kent Garden Strawberry Wine

A gloriously pink wine with real strawberry aroma. Best made with the finest, ripe garden strawberries — commercial ones lack the flavour. Serve chilled as an aperitif.

Ingredients

2kg fresh ripe strawberries (per 4.5L) 1.3kg white sugar 1 tsp citric acid 1 tsp pectic enzyme 1 Campden tablet 1 tsp yeast nutrient 1 sachet wine yeast (EC-1118)

Method

1. Hull and wash strawberries. Mash in bucket. 2. Add Campden tablet, cover 24 hours. 3. Add pectic enzyme (vital for clearing). Cover 12 hours. 4. Dissolve sugar in 2L warm water, add to fruit with cold water to total 4.5L. 5. Add citric acid, nutrient, activated yeast. 6. Ferment on pulp 4–5 days at 20°C. Press cap down daily. 7. Strain into demijohn. Ferment to dryness. 8. Rack when settling. Fine with isinglass for crystal clarity. 9. Bottle when stable. Best at 6–12 months.
