
If you could only do one thing right in winemaking, it should be sanitisation. More batches are ruined by contamination — lacto-bacteria, wild yeast, acetobacter — than by any other mistake. The good news is that correct sanitation is simple, cheap, and takes less than ten minutes.
These are two separate steps, both required.
Cleaning removes physical debris — grape skins, lees, dried wine, dirt. A clean surface looks and feels clean. Use hot water and a small amount of unscented washing-up liquid, or dedicated brewery cleaner (e.g. PBW, Chemipro OXI). Rinse thoroughly.
Sanitising kills residual microorganisms on a surface that is already clean. You cannot sanitise a dirty surface — organic matter neutralises sanitising agents.
The sequence is always: Clean → Rinse → Sanitise. Never skip cleaning before sanitising.
The most practical sanitiser for home winemakers is a potassium metabisulphite + citric acid solution:
Preparation:
Stir until dissolved. This produces a solution releasing approximately 300–400 mg/L free SO₂ — more than sufficient to kill bacteria and wild yeast on contact.
Application:
The residual KMS solution on your equipment will not harm the wine — the small carry-over is negligible.
Warning: Do not use hot water with KMS — it accelerates SO₂ off-gassing and the solution becomes less effective quickly. Use cold or lukewarm water.
Popular in brewing. Mix 1–2mL per litre of water. No-rinse, works on contact, leaves foam which is harmless. Excellent for equipment that's awkward to drain fully. More expensive than KMS per use.
Similar to KMS but releases SO₂ faster. Used for equipment sanitisation only — not for wine additions (it adds sodium ions). Works identically to KMS for cleaning purposes.
Boiling water (100°C) kills most pathogens. Practical for small items (tubing, airlocks) but impractical for carboys and tanks.

The hydrometer is the most commonly neglected. Every time you insert a hydrometer into your wine, you risk introducing contamination.
Cause: Oxygen exposure in the presence of acetobacter bacteria. Usually enters via unclean airlocks, siphon tubing, or surfaces.
How to avoid: Full sanitisation, keep airlocks topped up, minimise headspace.
Cause: Lactic acid bacteria from unclean surfaces or fruit.
How to avoid: Thorough sanitisation, adequate free SO₂, correct pH.
Cause: Wild Saccharomyces or Brettanomyces present on fruit or equipment.
How to avoid: KMS/SO₂ at must preparation, pitching a large dose of commercial yeast promptly.
Cause: Headspace with oxygen, bung improperly fitted.
How to avoid: Keep vessels topped up, check airlock water level weekly.
Bottles require particular care. Run each bottle through the following:
A bottle rinser (spinning nozzle that flushes the inside) makes this much faster for larger batches.
Experienced winemakers sanitise reflexively — before any equipment touches the wine, the sanitiser is already applied. Build this into your process from day one:
It takes less than ten minutes at the start of a session and prevents failures that take weeks to discover.
Tip: Keep a dedicated 2L spray bottle filled with KMS sanitiser solution. A quick spray-and-let-drain is sufficient for most small surfaces between full soak-sanitise sessions.
