Fruit Wine Sugar Calculations — Getting the OG Right

Most fruits contain insufficient natural sugar to produce a wine of satisfying strength. Without sugar additions, elderflower wine might reach 6% ABV; elderberry, perhaps 8–9%. Adding the right amount of sugar — and no more — is the fundamental arithmetic of country winemaking.

The Core Formula

Sugar additions are calculated from the difference between your current OG (what the juice provides naturally) and your target OG:

Sugar to add (kg) = (Target SG − Current SG) × Volume (L) × K

Where K = 0.190 (a correction factor for typical sugar solutions in wine).

For a more practical rough rule: 17g of sugar per litre raises OG by approximately 0.004 SG (or 1 Brix).

Step-by-Step Calculation

Step 1: Measure current OG

Squeeze juice from your fruit (without adding water or sugar) and measure with a hydrometer. For elderflower, you'll measure the infusion before adding any sugar.

Step 2: Set your target OG

Decide the style:

Step 3: Calculate the sugar addition

Example: You have 5 litres of elderberry juice at OG 1.040. Target OG: 1.090.
Difference: 1.090 − 1.040 = 0.050
Using the rule of 17g per 0.004 per litre:
0.050 ÷ 0.004 = 12.5 increments × 17g × 5L = 1,062g (approximately 1.06kg sugar)

Or using the K formula:
(1.090 − 1.040) × 5 × 1000 × 0.190 = 475g...

Note: These two approaches give different results because the "17g per 0.004 per litre" rule is approximate and includes water volume displacement. Use the formula and a dedicated must calculator for precision.

Recommended: use MakeWine's built-in must calculator or an online tool (e.g. the Pearson Square sugar addition calculator or a winemaking spreadsheet) to get accurate results. The manual calculation involves corrections for volume displacement by sugar that make the arithmetic non-trivial.

Step 4: Verify with a post-addition reading

After dissolving and adding all sugar, stir well and take a final OG reading. Adjust with small additional amounts of sugar or water to hit your target exactly.

Different Sugar Types

White table sugar (sucrose)

The most common choice. Sucrose is split into glucose and fructose by the yeast enzyme invertase. Produces a clean fermentation.

Glucose / dextrose (corn sugar)

Ferments directly without inversion. Slightly lower sweetness than sucrose (80% as sweet). Some winemakers prefer it to avoid any potential "sugar" taste in delicate wines. About 5% more glucose is needed than sucrose by weight to achieve the same OG increase.

Invert sugar / simple syrup

Pre-inverted sucrose (heated with acid to split into glucose + fructose). Ferments slightly faster. Useful for priming, but no quality advantage in still wines.

Brown sugar / raw sugar

Adds molasses-like character. Fine if that's desired (e.g. in some fruit wines or elderberry); noticeable flavour contribution.

Honey

Used in meads, but also adds character to country wines. Honey is approximately 79–82% sugar by weight (the rest is water and trace compounds). To convert: if a recipe calls for 500g sugar, substitute approximately 620g honey. The water content in honey reduces your must volume calculation slightly.

Calculating for Meads

Honey musts are calculated differently because honey has variable water content:

Rule of thumb: 1kg of honey dissolved in must raises OG by approximately 0.035–0.040 per litre.

For a 5-litre must at target OG 1.110:

  • Starting from water (1.000)
  • 0.110 increase needed
  • 0.110 ÷ 0.035 per kg × 5L = approximately 3.14kg honey

Use a honey calculator or MakeWine's mead calculator for precision — honey sugar content varies significantly between varieties (Acacia honey vs buckwheat honey have measurably different sugar concentrations).

Dissolving Sugar

Never add granulated sugar directly to must without dissolving first. Dry granules settle and create localised high-sugar zones that stress the yeast. Instead:

  1. Weigh the required sugar
  2. Dissolve in a small amount of warm (not boiling) juice or water
  3. Stir until completely dissolved
  4. Add to the main must and stir well before taking OG reading

For large amounts of sugar (1kg+), gentle warming (50–60°C, not boiling) significantly speeds dissolution.

💡

Tip: Always do a final OG check after all additions — sugar, juice, and water — before pitching yeast. It takes 2 minutes and prevents discovering 6 weeks later that your "12% wine" is actually 9% because the sugar calculation was off.
