
Every winemaker has made these mistakes. The difference is whether you learn from them after batch one or batch ten. Here are the problems beginners most commonly encounter, why they happen, and what to do about them.
Symptom: Wine smells like vinegar, nail polish, or has a distinctly "off" character within a few weeks.
Why it happens: Acetobacter (the bacterium that makes vinegar) is ever-present in the environment. It only needs surface oxygen and a surface that wasn't sanitised to colonise your wine. Similarly, wild bacteria can produce ropiness, mousiness, or other defects.
Fix / Prevention:
If the wine already smells like vinegar, there's no fix — acetic acid cannot be removed at home.
Symptom: You have no idea what your ABV is. You bottled a wine that still had active fermentation.
Why it happens: Hydrometers seem complicated or unnecessary to beginners. They're not.
Fix / Prevention:
If you bottled too early: open every bottle immediately, combine into one vessel, let it finish, then re-bottle. Do not leave bottles sealed with active fermentation.
Symptom: Fermentation never started; yeast never woke up; or fermentation started hot and smells "fusel" and harsh.
Why it happens: Rehydrated yeast is sensitive to temperature shock. Pitching warm yeast into cold must, or pitching into must that's too warm (above 30°C) kills the yeast.
Fix / Prevention:
If fermentation didn't start: wait 24–36 hours. If still no activity, re-pitch with a fresh sachet of yeast (not more than one sachet per 20L).
Symptom: Wine develops an oxidised, flat, sherry-like character. Surface mould.
Why it happens: Leaving a large air gap (headspace) in the vessel allows oxygen to slowly degrade the wine. Headspace increases after racking when you lose volume to lees.
Fix / Prevention:
If the wine is already oxidised: mild oxidation can improve with time if caught early. Severe oxidation is irreversible.
Symptom: Bottles overflow or fizz excessively when opened. Slight spritz in what should be still wine.
Why it happens: Wine naturally absorbs CO₂ during fermentation. Cooler wines hold more CO₂. If you don't degas (remove the dissolved CO₂) before bottling, the wine will still have gas in it — which comes out when the bottle is opened.
Fix / Prevention:
If already bottled with gas: there's limited recourse. Store upright in a cool place; some gas escapes slowly. For significant carbonation, open carefully to release pressure.
Symptom: Wine is sweet when it should be dry; refermentation in bottle; bottles building pressure.
Why it happens: Gravity dropped quickly in the first few days (usually 80% of sugar is consumed in the first third of fermentation by time), then slowed dramatically. Beginner assumes it's done.
Fix / Prevention:
If there's residual sugar in bottles: open them carefully, combine, allow to finish in a vessel with airlock fitted.
Symptom: Fermentation starts very slowly or not at all even with good temperature and healthy yeast.
Why it happens: Potassium metabisulphite (Campden tablets) is used to knock back wild yeast and bacteria before pitching commercial yeast. But adding too much inhibits even the commercial yeast.
Fix / Prevention:
If fermentation won't start due to SO₂: wait, stir to release SO₂, and re-pitch yeast.
Symptom: Fermentation is slow and sluggish even in a warm room; or wine tastes harsh and hot after fermentation in summer.
Why it happens: Ambient temperature is not the same as fermentation temperature. Fermentation is exothermic — the wine generates heat. In summer, a room at 22°C can produce a ferment running at 28°C+.
Fix / Prevention:
Symptom: You can't remember what you did, what the OG was, what yeast you used, or when you racked. You can't repeat a successful batch.
Why it happens: "I'll remember" is always wrong.
Fix / Prevention:
Most first-batch failures come down to one of four root causes: contamination, incorrect temperature, insufficient monitoring, or bottling too early. Focus on these four pillars — sanitisation, temperature control, gravity measurement, and patience — and most other problems become minor.
Tip: Your second batch will be significantly better than your first. Your fifth batch will be better still. The goal isn't perfection on batch one; it's learning something specific from every batch you make.
